  • 1¼ cup (160 g) All-purpose flour, plus more if needed
  • ¼ cup (30 g) almond flour (or substitute fine cornmeal)
  • 3 tbsp (38 g) granulated sugar
  • ¼ tsp salt (diamond kosher)
  • ½ cup (4 oz;113 g) cold unsalted butter
  • ¼ cup buttermilk, cold; plus more if needed
  • 1 egg (beaten for egg wash)
  • Demerara sugar, for sprinkling
