A fresh, nutty pesto made with zucchini, basil, mint, walnuts, and Romano cheese.


Ingredients

Scale
  • 1 cup fresh basil leaves
  • 1/2 cup fresh mint leaves
  • 1/2 cup toasted walnuts
  • 2 garlic cloves
  • 2 zucchini, small, trimmed, and cut into 2-inch pieces
  • 1/2 cup Romano cheese, grated
  • 1/2 cup olive oil


Instructions

  1. Place all ingredients except olive oil in a food processor.
  2. Gradually add oil as mixture blends.
