Pancake Pizzas

The best part is that every kiddo gets to make their own!


Ingredients

  • Pancake mix according to package directions

For the toppings: anything goes, but here’s what we’re thinking!

  • Marinara sauce
  • Grated parmesan or  shredded cheddar cheese
  • Cherry tomatoes, cut in half
  • Pepperoni
  • Bell peppers, diced
  • Diced ham
  • Pineapple, chopped


Instructions

  1. Make pancakes!
  2. We thinned our mix out with a little extra water, to make crepe-like pancakes. We let them brown nicely on each side in an oiled skillet for some crispiness.
  3. Once they’re nice and brown, transfer them to a cookie sheet and let the littles make their own pizzas!
  4. Turn on your oven’s broiler.
  5. Start with tomato sauce, then cheese, and then their favorite toppings.
  6. When you’ve constructed a few pancake pizzas, place the sheet under the broiler until cheese melts and tomato sauce starts to steam a little.
  7. Remove from oven, and when cool enough to eat, let the littles enjoy! If they like, you can provide extra marinara for dipping.
