Ingredients

- 1 cup extra virgin olive oil
- 1 cup red wine vinegar
- 1 cucumber
- 1 large tomato
- 1 small onion
- Day old bread
- (Add any veggies you have on hand to enhance!)
Instructions
- Slice all vegetables in 1/2 inch pieces.
- Toss in a generous amount of salt and set aside for 3-4 hours.
- Cut bread into 1/2 inch pieces.
- Once vegetables have sat, drain them and keep the juice.
- Toss vegetables with bread and 1/4 cup of vegetable juice, 1/4 cup red wine vinegar.
- Season with pepper and more salt if needed.
