Disney Adult Dole Whip Cocktail

If you’ve walked the streets of Disney Parks, you’ve probably come across the refreshing, pineapple soft-serve Dole Whip on those hot days. The good news is, you don’t have to go all the way to Disney to recreate this treat and you can even upgrade it to a cocktail for the adults in the room.

First, you whip up a quick sorbet made of frozen pineapple, cream of coconut, tequila, honey, and lime. You spice it with a bit of Aleppo pepper. Please refrain from eating this goodness right out of the bowl of your food processor: it is designed to float atop a fizzy mix of grapefruit or pineapple soda, tequila, honey, and lime juice. The finished drink is truly a masterpiece.

What is Dole Whip?

Dole Whip is a tropical soft-serve frozen dessert created by the Dole Food Company and made famous after being introduced at Disney Parks, where it has become an iconic treat. The classic pineapple version is dairy-free, vegan, and each bite fills your mouth with a creamy texture and refreshing flavor. Though it also comes in other fruit varieties like mango, raspberry, strawberry, lemon, lime, orange, and cherry.

Description

Frozen pineapple sorbet in a fizzy cocktail.

Ingredients

Scale

For the Dole Whip sorbet:

  • 2 oz blanco tequila
  • 1 oz lime juice
  • 1 oz honey syrup (equal parts honey and water, blended)
  • 2 oz pineapple juice
  • 1 oz Coco Lopez cream of coconut
  • 1 1/22 cups frozen pineapple chunks
  • 1 tsp Aleppo pepper
  • Pinch of salt

For the cocktail:

  • 1 oz blanco tequila
  • .25 oz honey syrup (equal parts honey and water, blended)
  • .25 oz lime juice
  • Grapefruit or pineapple soda


Instructions

For the Dole Whip sorbet:

  1. Combine all ingredients in a blender on high.
  2. When smooth, decant into a sealable container and store in the freezer until cocktail time.
  3. Remove 20 minutes before cocktail to soften.

For the cocktail:

  1. In a hurricane glass, add tequila, honey syrup, and lime.
  2. Fill glass about halfway with grapefruit or pineapple soda.
  3. Top with Dole Whip sorbet. Garnish with a lime wheel and sprinkle Aleppo pepper on top. Serve with a fun straw and enjoy!
