TABLE contributor Kelly Kinsey devised this great Pancake Pizza activity for kids. It’s so much fun to hand over the fixings to the kids so that they can make their own little pizzas. These kid-friendly pancake pizzas turn crepe-like pancakes into fun mini crusts topped with marinara, cheese, and favorite toppings. Quick to broil and customizable, they’re a playful, hands-on meal that brings joy to the table. Give it a try! This is really and truly a “happy meal” worthy of the name.
Some Fun Facts!
Most people agree that pizza was invented in Naples. Flatbreads with toppings were sold from street carts for a very long time in Naples. In fact, all across the Mediterranean, you might have seen flatbreads with toppings across thousands of years.
But what we would recognize as pizza seems to have been invented by Raffaele Esposito in 1889 when the new king and queen of Italy visited Naples. He named his first pizza Margherita, after the queen.

Pancake Pizzas
Description
The best part is that every kiddo gets to make their own!
Ingredients
- Pancake mix according to package directions
For the toppings: anything goes, but here’s what we’re thinking!
- Marinara sauce
- Grated parmesan or shredded cheddar cheese
- Cherry tomatoes, cut in half
- Pepperoni
- Bell peppers, diced
- Diced ham
- Pineapple, chopped
Instructions
- Make pancakes!
- We thinned our mix out with a little extra water, to make crepe-like pancakes. We let them brown nicely on each side in an oiled skillet for some crispiness.
- Once they’re nice and brown, transfer them to a cookie sheet and let the littles make their own pizzas!
- Turn on your oven’s broiler.
- Start with tomato sauce, then cheese, and then their favorite toppings.
- When you’ve constructed a few pancake pizzas, place the sheet under the broiler until cheese melts and tomato sauce starts to steam a little.
- Remove from oven, and when cool enough to eat, let the littles enjoy! If they like, you can provide extra marinara for dipping.
