Spiral-Cut Zucchini Summer Salad Recipe

Ingredients

  • 1 large zucchini, spiralized
  • 1 cup mini cucumbers, chopped
  • 1 cup cherry tomatoes, chopped
  • 1 cup assorted olives
  • 1/4 cup olive oil
  • 1/4 cup white balsamic vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • Basil leaves for garnish

Instructions

  1. In a large bowl, add all the vegetables together and set aside.
  2. In a Mason jar, add all your dressing ingredients and shake until combined.
  3. Pour over your summer salad and gently toss. Garnish with basil leaves.
