Chelsea McCune of Nemacolin echoes the green, rolling hills surrounding the Laurel Highlands in her cocktail, Birdie. A refreshing, garden-fresh twist on a wine spritzer. Inspired by the rolling hills and breezy afternoons of Western Pennsylvania, this drink is as elegant as it is easy-drinking.
With crisp Tanqueray gin, freshly pressed celery juice, floral elderflower liqueur, and a lively splash of Moscato, the Birdie cocktail is light, bright, and unmistakably green—in the best way. It’s the kind of cocktail that feels just right after a morning on the course, an afternoon by the pool, or a slow, golden-hour stroll. Garnished with celery sprigs and citrus, it’s both visually striking and effortlessly refreshing.
This one’s for those sweet summer days when all you need is something cool in your hand and a little time to enjoy it.
