This beauty starts with a blackberry and lime paleta and a brew of bourbon, hard cider, lemon, honey, orange bitters and frozen blackberries to make a bramble. As the blackberry popsicle melts into the drink, it subtly changes the flavor, making each sip its own kind of treat.
Bourbon lends its signature notes of caramel and vanilla, while crisp hard cider adds brightness and effervescence. Fresh lemon juice, honey, orange bitters, and frozen blackberries round out the cocktail with a balance of sweet, tart, and juicy flavors that feel right at home on a warm afternoon. Blackberry Bourbon Bramble with Blackberry Popsicles
- Yield: 2 Cocktails 1x
Description
A popsicle and a cocktail? Pure nostalgia.
Ingredients
For the popsicles:
- 1 cup fresh blackberry purée
- 1/4 cup sugar
- 1/4 cup lime juice
- 1 cup hot water
For the cocktail:
- 2 oz bourbon (Buffalo Trace preferred)
- .75 oz fresh lemon juice
- .75 oz honey syrup (equal parts honey and water)
- 1 cup blackberries, frozen
- 2 dashes orange bitters
- Splash of dry hard cider
Instructions
For the popsicles:
- Pop a cup of fresh blackberries into a food processor and puree.
- Add sugar, lime juice and water and blend.
- Pass the mixture through a strainer to remove seeds.
- Pour into your favorite popsicle molds. Freeze overnight.
For the cocktail:
- Add all ingredients except hard cider in a shaker. The frozen blackberries act as ice!
- Shake until the mixture is cold.
- Strain into a julep cup or wide-mouthed glass.
- Top with hard cider and add the popsicle as garnish. Chill out and enjoy!
