What Is Ceviche?

Ceviche is a fresh seafood dish that is prepared by “cooking” the raw fish in citrus juices, such as lime or lemon. The acidity in the citrus juices denatures the proteins in the fish, giving it a cooked texture without using heat. Ceviche often includes additional ingredients like chopped onions, tomatoes, peppers, and cilantro, which add flavor and texture to please the palate. Ceviche is typically served chilled and sometimes garnished with avocado or tortilla chips.

Shrimp Ceviche Recipe

Serves 20-30 guests

Shrimp Ceviche Ingredients

  • 4 lb shrimp, precooked and frozen
  • 6 limes
  • 1 small red onion
  • 2 avocados
  • 1 jalapeño pepper
  • 1 tsp salt

Instructions

  1. Defrost shrimp in refrigerator overnight.
  2. Slice the red onion and soak in water for about 1 hour (remove the intensity).
  3. Juice the limes, chop the avocado into small cubes, slice the jalapeno and remove the seeds.
  4. Combine all ingredients and let marinate at least 2 hours before serving.
