Spicy Sausage and Greens Soup Recipe
INGREDIENTS
1 lb. Parma brand loose hot sausage
1 jar Labriola’s tomato sauce
1 small head escarole, chopped
6 cups fresh spinach, chopped
4-5 medium gold potatoes, peeled and diced
4 cloves garlic, minced
3 quarts mushroom broth
Salt and pepper to taste
INSTRUCTIONS
- In a large stock pot, brown sausage until there is no pink left.
- Add onion, and garlic and cook until tender
- Add tomato sauce, mushroom stock, greens and potatoes. Simmer until potatoes are tender and the leaves are wilted
- Serve with shredded cheese sausage until there is no pink left.
