The Best Vegan Stuffing

What is Vegan Butter?

In this recipe we use vegan butter as a substitute, so you may be wondering what exactly it is. It is typically made from a combination of plant fats, such as coconut oil, palm oil, or almond butter, along with water, emulsifiers, and flavorings. While it may not have the exact same flavor or texture as traditional butter, it’s a great alternative when used within a recipe.

The Best Vegan Stuffing Recipe

Vegan Stuffing Ingredients 

  • 1 cup leeks, chopped  
  • 1 small onion, chopped 
  • 3 stalks celery, chopped 
  • 8 oz vegan butter 
  • 1 tsp poultry seasoning 
  • 1 tsp freshly chopped thyme 
  • 1 tsp freshly chopped rosemary 
  • 1 tbsp vegetable bullion 
  • 2 cups roasted buttercup squash  
  • 1 honey crisp apple, chopped  
  • 1 qt vegetable stock 
  • 1 large loaf of bread cut into bite-sized pieces  
  • 1/2 cup roasted and salted pepitas  

Instructions 

  1. In a large skillet, add the 8 oz of butter and melt on low heat. Add the leeks, onion, and celery and cook on low until translucent. Add the poultry seasoning, thyme, rosemary, and vegetable bullion and continue to cook until fragrant. Set aside.  
  2. Cut the buttercup squash into medium sized pieces, discarding the seeds. Toss with olive oil and roast at 400 degrees for 15 minutes until tender and browned on the edges. Set aside.  
  3. In a large mixing bowl, add the bread pieces, roasted squash, honey crisp apple, and the sweated-down veggie butter mixture. Toss together until evenly mixed together.  
  4. Add the vegetable broth slowly until a moist stuffing is formed. Place stuffing mixture into a greased baking dish and bake for 20-25 minutes at 350 degrees until brown and crispy on the top. Garnish the Vegan Stuffing with pepitas before serving.
