Ceviche is a fresh seafood dish that is you prepare by “cooking” the raw fish in citrus juices, such as lime or lemon. The acidity in the citrus juices denatures the proteins in the fish, giving it a cooked texture without using heat. Ceviche often includes additional ingredients like chopped onions, tomatoes, peppers, and cilantro, which add flavor and texture to please the palate. Ceviche is typically served chilled and sometimes garnished with avocado or tortilla chips.
