- 2 tbsp olive oil
- 1 tsp sherry vinegar
For the chickpea purée:
- 1 cup cooked chickpeas
- 2 tbsp tahini
- 1 clove garlic
- Juice of 1/2 lemon
- 2 tbsp olive oil
- Salt to taste
For the lamb:
- 1 lb lamb loin, trimmed and tied
