Vegan Black Rice Breakfast Bowl With Peaches

This recipe if especially great for a vegan breakfast with black rice, peaches, and coconut milk sharing star billing. Black rice—really more of a purply-black color—contains beneficial anthocyanins (the same compounds found in other red and purple foods like purple cabbage and grapes) and has a chewier texture than traditional white rice.

The rice can be made the night before, while the peach and coconut milk can be blended together at the last minute. Pass around bowls of toasted coconut, almonds, and chia seeds for the perfect do-it-yourself breakfast.

Vegan Black Rice Breakfast Bowl With Peaches

Description

Chewy black rice, creamy coconut milk, fresh peaches, and crunchy toppings.


Ingredients

Scale
  • 1 cup black rice
  • 3 peaches, divided use
  • 1 (13.5 oz) can unsweetened coconut milk
  • 12 tbsp runny honey, plus additional for garnish
  • Coconut flakes, sliced almonds, and chia seeds, for garnish
  • Salt, to taste


Instructions

  1. Cook the rice according to the package instructions. Once cooked—it should still have some bite—allow it to cool slightly before serving. Alternatively, you can chill it overnight and serve it cold.
  2. Peel the peaches, slice them in half, and remove the pits. Place half of the peaches in a blender with the coconut milk, 1 tablespoon of honey, and a pinch of salt. Blend until smooth. Taste and add more honey if you prefer a sweeter flavor.
  3. Slice the remaining peaches thinly into half-round slices.
  4. Divide the rice between serving bowls. Pour over some of the peach and coconut puree, then top with the sliced peaches. Garnish with your choice of coconut flakes, sliced almonds, and chia seeds. Finish with an extra drizzle of honey and enjoy!
